Easy BBQ Chicken and Vegetables

This is one of the easiest dishes I have ever created and made. I even made it for my in-laws during a 7-day power outage that hit Toronto during the 2013 Christmas season, using just a small butane burner.

Easy BBQ Chicken and Vegetables

Serves 4 - 6

Preheat oven to 425 degrees F


1 whole chicken, cut into 8 pieces, or about 3 lbs of your favourite bone-in chicken parts.

1 - 500 ml bottle of your favourite bbq sauce

3 large onions, finely chopped

4 large carrots, peeled and cut into chunks

6 sticks of celery, cut into 1 inch chunks cut diagonally

2 T chicken bouillon

1 t fish sauce

1 t salt

1 t fresh ground pepper

Now for the simplicity of this recipe.

For a healthier version of this dish, remove skin from chicken pieces and discard. Add chicken pieces, BBQ sauce, vegetables, chicken concentrate, fish sauce, salt and pepper to a casserole dish or heavy bottom pot. Stir all ingredients.

Cover and bake in 425 degree preheated oven for an hour. Remove cover after 30 minutes and stir. Serve with your favourite rice when chicken is fully cooked through, about an hour to an hour and a half.

Or if you wish, like I did during the power outage, simmer atop the stove on medium low heat for about an hour again till chicken is fully cooked through.
