When we were growing up as children, we never had dessert very often. But when we did, this was a staple and we sure enjoyed it. It’s a great way to use up stale bread. My mother sometimes made a vanilla sauce to go with it. Yummy...

Old Fashioned Bread Pudding with Vanilla Sauce

Preheat oven: 350 degrees F


8 cups stale bread, cut in 1 - 2” cubes

6 large eggs, beaten

4 cups whole milk

1 ¼ cups brown sugar, packed

1/8 t fine sea salt

1/2 cup butter, melted

2 t nutmeg, fresh ground

2 T vanilla

1/2 cup chocolate chips or chocolate pieces broken up

1/2 cup chopped pecans

Butter a 3 - 4 quart casserole dish. Set aside.

In a large bowl add beaten eggs, milk, brown sugar, salt, melted butter, nutmeg and vanilla. Stir well. Add bread cubes and stir to help incorporate the milk mixture into the bread.

When almost all the milk mixture is soaked up by the bread, add the chocolate chips and the pecans. Stir once again and pour into prepared casserole dish. Bake for about 45 - 50 minutes till set in the middle.

Vanilla sauce:

1/2 cup unsalted butter

2 t flour

1 cup white sugar

1/2 cup heavy cream (35%)

1 T vanilla

Melt butter on medium heat in a saucepan. Add flour and stir till incorporated. Add sugar and cream.

Cook over medium heat, stirring occasionally until mixture thickens and comes to a boil, about 6 - 7 minutes. Remove from heat and stir in the vanilla.

Serve with bread pudding.
